Vegan Sweet Potato Kale Quinoa Burgers

Oooooh friends, have I got a good one for you!

These Vegan Sweet Potato Kale Quinoa Burgers are literally so flavorful & delicious. Shout out to my internet bestie, Heather Lindsey, who inspired this amazing meal (which is now in the weekly rotation). I honestly believe any meat or non-meat eater will enjoy this “burger”.
Now bare with me guys! I'm not really a “measurer” when it comes to cooking, lol. I season to taste, which you can see from the video. The full mixture can go far and can make almost 10-12 smaller patties, however, I like mine a little bigger! If you refer to how big I made the patties in the video, the mixture gave me 7.
Let’s get into it!
Prep Time: 25 minutes
Cook Time: 27-29 minutes
Total Time: Under an hour
Oven Temp: 400 degrees
Step 1: Prepare your quinoa. 1 cup quinoa, 2 cups water. Cook according to the package. Season to taste. Roughly 1tbs of salt, 1tbs of pepper, 1tbs of garlic pepper and 1 ½tbs of onion powder was used to season the quinoa.
Step 2: Prepare flaxseed mixture. 2tbs ground flax + 6tbs water. Mix and set aside.
Step 3: Cut your veggies. Roughly half a sweet potato, grated and chopped. Half of an onion, diced. A bunch of kale, chopped.
Step 4: Prepare flour mixture. ½ cup flour of choice. Add seasonings of choice. Roughly 1tbs of onion powder, 1tbs of dried oregano, 1tsp of salt, 1tbs of pepper, 1tbs of cayenne pepper, 1tbs of dried basil was used. Add in flax mixture and 1tbs of tahini paste. Mix.
Step 5: Add cooked quinoa. Mix again.
Step 6: Add onions, kale and sweet potato. Mix until fully combined.
Step 7: Assemble the patties. TIP: Keeping your hands wet after forming each patty prevents the mixture from sticking to your hands and makes it easier to form your patties.
Step 8: Bake on a greased cookie sheet at 400 degrees for 17 minutes then flip the patties. Bake on the other side for another 10 minutes.
Step 9: Serve as your heart desires! A little BBQ sauce is all I need buuuuttttt, I’m kinda basic haha.

Step 10: The salad on the side included: Shredded carrots, tomatoes, onions, craisins, sliced almonds, and hemp seeds over spring mix greens. A dash of grapeseed oil, salt, pepper, lemon and lime juice as the dressing and you are GOOD TO GO. I promise. This salad is so good it almost stole the show from the burgers. No joke.
